Futabasan Matsumidori Daiginjo is pressed from Yamada Nishiki polished to 40% at Sasamesoubee Shoten in Kasama, Ibaraki, using soft well water on the grounds of the Kasama Inari Shrine. The brewery uses hand-crafted methods to produce a sake described as light and soft with the five flavors of sweetness, dryness, acidity, bitterness, and astringency in harmonious balance.
