Description

Nippon Bare rice polished to 70% is fermented using the yamahai method at Uehara Shuzo in Shiga Prefecture. Uehara's yamahai, made without adding commercial lactic acid, is pressed using one of only two remaining wooden lever presses (tenbinshime) in Japan, yielding a rich, full-bodied sake with firm acidity that excels when warmed.
