Funaotaki Daiginjo uses Yamada Nishiki polished to 35% from Shibasaki Shuzo in Gunma. Named after a famous waterfall near the Haruna Mountains, this daiginjo is crafted with spring water from the Haruna mountain system and hand-crafted koji, producing a fruity aroma and clean, refined finish. The brewery has received multiple gold awards at the National Sake Appraisal.
