Daiginjo brewed from Yamada Nishiki polished to 35%, pressed by allowing the mash bags to hang and drip freely without applied pressure, then bottled undiluted. The shizuku drop-collection method yields an exceptionally pure, refined spirit with a graceful ginjo aroma and precise, clean finish.
