Description
This junmai from Inoue Shuzo in Tochigi is pressed using the traditional fukuroshibori bag-press method, in which the mash is filled into cloth bags and allowed to drip under its own weight without applied pressure, yielding exceptional clarity and delicacy. An unusually high koji rice ratio of 50% drives deeper enzyme activity during fermentation, contributing pronounced umami and a rich, structured palate. The muroka (unfiltered) and honnama (unpasteurized) designations preserve the sake's raw, vibrant character straight from the pressing stage.
