Produced by Inoue Shuzo in Tochigi, this junmai ginjo is pressed using the fukuroshibori bag method, allowing the mash to yield only its most delicate free-run juice without mechanical pressure. The muroka unfiltered and honnama unpasteurized treatment keeps the sake in its most natural state, with lively koji-derived complexity and bright ginjo aromatics intact. The combination of ginjo-level polishing and traditional pressing produces a sake of notable finesse and a fresh, textured mouthfeel.
