Hitogokochi rice polished to 55% forms this Fukumuryo junmai ginjo genshu hiyaoroshi from Kutsukake Shuzo in Ueda, Nagano. Hiyaoroshi is a summer-matured sake released in autumn after a single pasteurization, and this genshu version is bottled at full undiluted strength, delivering a fruity aroma, the characteristic sweetness of contract-grown Hitogokochi, and a wine-glass-award-winning Gold Medal profile.
