Fukuine is brewed by Kataoka Shuzo in Toho Village, Fukuoka's easternmost settlement, using water from the Iwaya Spring, one of the only spring sources in Fukuoka Prefecture designated among Japan's 100 Famous Waters. This junmai ginjo reflects the brewery's commitment to hand-crafted sake rooted in the mineral-rich soft water of the Hikosan mountain range.
