This nigorizake from Kataoka Shuzo in Toho Village, Fukuoka, is made with the mineral-rich soft water of the Iwaya Spring, one of Japan's 100 Famous Waters. Unfiltered and cloudy, it carries the characteristic gentle sweetness and texture of the rice alongside the crisp mountain water character.
