Echigozakura Junmai Daiginjo, polished to 45%, showcases the scale and precision of Echigozakura Shuzo in Agano City, Niigata, one of the few breweries producing 10,000 koku of daiginjo annually. Founded in 1890, this National New Sake Gold Medal winner (3 consecutive, 2017-2019) uses zaru-gaeshi water absorption and traditional steaming for the clean, soft Niigata daiginjo style.
