Tokusen Junmaishu Koshino Nihonzakura (越乃日本桜) is a premium Junmai from Echigozakura Shuzo in Agano City, Niigata, polished to 72%. Founded in 1890, this brewery uses zaru-gaeshi water absorption and traditional seiro-kama steaming even at its unusually large scale, and this Junmai draws on the clean, soft Niigata style with locally sourced rice.
