Description
Named after the prominent Dainichi peak near the brewery, this sake from Gifu's Gujo district is brewed using natural flower yeast isolated from the wild, a technique developed at Tokyo University of Agriculture. At 70% polishing and fermented with flower yeast, it achieves a mellow, stable character that resists harsh aging notes.
