Daiginjokoshu Sembazuru is an aged daiginjo using Yamada Nishiki polished to 40%, cellared for at least five years in cold storage at Sato Shuzo in Taketa, Oita. Extended maturation in the high-altitude environment of Kuju mellows the sake into a settled, refined expression with deepened complexity.
