Sembazuru Josen is a standard-grade sake polished to 70% from Sato Shuzo in Taketa, Oita, the only clear sake brewery remaining in the city. Elevated at 600 meters with soft Kuju springwater, it reflects the brewery's tradition of clean, food-paired everyday sake named after the Nobel laureate Yasunari Kawabata who frequented Kuju and championed the brand.
