The Tobinkakoi (jar-collected) daiginjo is the brewery's flagship competition-grade sake, made by hanging bags of pressed moromi and collecting only the free-run drops into small jars. Yamada Nishiki polished to 35% yields a sake with white peach and melon aromas, a luminous and silky texture, and a record of ten consecutive gold medals at national competitions.
