Description

Takahashi Sukesaku Shuzoten, founded in 1902 in Yuza Town, Yamagata, brews in the shadow of Mt. Chokai, drawing water from the mountain's spring-fed streams. Dewasansan is Yamagata's own sake rice, developed from Omachi heritage stock and required for the prefecture's official GI designation: difficult to grow, specific to the region, and producing a sake with its own quiet distinction. Polished to 55% and brewed with semi-soft Chokai spring water, this junmai ginjo delivers a refreshing citrus aroma, a gentle and soft palate, light acidity with a faint bitterness on the finish, and a subtly dry profile that reflects the restrained Tohoku coastal character.
