Description

Hiroshima-grown Senbon Nishiki rice polished to 50% is fermented with a proprietary Hiroshima ginjo yeast to produce this lightly structured daiginjo. The alcohol level is kept purposely modest, yielding a soft, approachable character that expresses the mild, clean water of the Chugoku mountain region.
