Yamada Nishiki polished to 35 percent, this daiginjo won a gold medal at the National New Sake Competition and is named in honor of Katsu Kaishu, who stayed at the founding family's home for about a month. The aroma is beautifully delicate, with a full and rich flavor followed by a refreshingly crisp finish.
