Yamada Nishiki polished to 35% from Yoshikubo Sake Brewery in Mito, Ibaraki, under the Ippin label, is brewed by the resident Hitachi toji (Ibaraki master brewer) using locally contracted Yamada Nishiki. This daiginjo earned a double gold medal at an international wine competition and is served at the Dodger Stadium VIP suite in Los Angeles.
