Himuro Daiginjo is a year-round nama (unpasteurized) sake from this Hida Takayama ginjo-only brewery, pressed during the coldest winter months and released fresh, with seasonal evolution through spring, summer, and autumn. The Hida mountain spring water and cool alpine climate shape a clean, lightly dry profile with controlled fruity ginjo aromas.
