Himuro Junmai Daiginjo is the pure rice counterpart to the flagship Himuro Daiginjo nama, produced year-round without pasteurization at this Hida Takayama ginjo-only brewery. The addition of the junmai specification means no added distilled alcohol, letting the rice-derived umami and mountain spring water character come through more directly.
