Yamada Nishiki polished to 35% is used alongside the brewery's proprietary M310 yeast to produce this daiginjo, which has received a gold medal at the International Wine Challenge 2020 and fourteen gold awards at the National New Sake Competition. Clean, fragrant, and mellow, it represents the flagship expression of this Ibaraki brewery.
