Eichi Tamanoi Daiginjo is a prestige expression from Niki Shuzo, a Hida Takayama brewery founded in 1695 that produces exclusively ginjo-grade sake. Drawing on the pure well water at the center of the brewery that inspired the Tamanoi name, this daiginjo reflects the house commitment to aroma-forward, elegantly structured sake from the Hida mountains.
