Kakushizake (隠し酒), meaning hidden sake, is a special reserve Daiginjo from Chiyonokame Shuzo in Ikazaki, Ehime, a brewery established in 1716 during the Kyoho era. Made with locally contracted Matsuyama Mii rice polished to 45% and the Ehime-bred EK-7 yeast known for its lychee-like aroma, this premium expression showcases over 300 years of Shikoku brewing heritage.
