Description
Daiginjo made from Yamada Nishiki polished to 40% at this Chichibu kura founded in 1625, using limestone-filtered spring water from the ancient Chichibu geological strata. The premium polish and slow, cold fermentation produce a sake with elevated fragrance and a broadly layered, mellow palate. Yamada Nishiki at this polish level yields restrained, refined ginjo character.
