Yamada Nishiki polished to 55 percent delivers a refined junmai ginjo with an elegant, gently sweet fragrance and juicy rice sweetness throughout. The palate is exceptionally smooth, finishing slightly sweet, from a Saga brewery reborn under an owner-toji who revived the label in 2009.
