Azumatsuru

Azumatsuru is the flagship of Azumatsuru Shuzo in Taku City, Saga Prefecture, a brewery founded in 1830 that quietly fell dormant in 1989 amid declining demand. In 2009, the sixth-generation owner Yasunori Nonaka revived it as a hands-on toji himself, drawing on soft, gentle groundwater filtered through the mountains of Taku to produce a full-bodied, savory style that reasserted Saga's identity in the world of artisan sake.
