Contract-grown, pesticide-free Yamada Nishiki from Itoshima, Fukuoka, polished to 60% gives this junmai a natural rice sweetness and deep umami. Brewery staff participate in rice cultivation from planting onward, and the No. 7 yeast fermentation produces a calm, earthy aroma. Warming the sake enhances its soft, grain-forward character.
