Named by essayist Itoi Shigesato and crafted from Yoshikawa-grown Yamada Nishiki at a minimally polished 90% ratio using Nagata natural farming methods that produce low-protein, high-starch rice. Despite the near-whole-grain milling, the sake delivers banana and vanilla-like aromas, deep rice sweetness, and a clean finish with firm acidity.
