Released as a spring namazake, this junmai daiginjo from Akishika Shuzo in Nose, Osaka is an unpasteurized seasonal expression built on the brewery's organically farmed Yamadanishiki rice. Akishika, founded in 1886, has grown its own sake rice since 1995 and produces daiginjo-class sake using a koji technique that maximizes rice dissolution for depth rather than delicate perfume alone.
