Omachi is the heritage rice variety that Toshimori Shuzo in Okayama's Akaiwa region has championed for generations, using contract-grown local grain. The brewery polishes all its rice to 55% or below, and its Akaiwa Omachi expression delivers the variety's characteristic rich, full-bodied umami.
