Yamada Nishiki polished to 60% forms this junmai from Ono Shuzoten in Tatsuno, Nagano Prefecture. The Yoakemae brand, meaning before the dawn, takes its name from Shimazaki Toson's celebrated Meiji-era novel set in the Kiso Road region where the brewery stands at 810 meters altitude.
