Tomitsuru Junmaishu uses Tama Sakae polished to 60%, the Shiga-origin sake rice, from Aichi Shuzo in Aishō-cho, Shiga. Founded in 1869 near Lake Biwa with Suzuka mountain range water, this tiny brewery's Junmai with regional Tama Sakae reflects the GI Shiga spirit of using locally rooted ingredients for a clean, rice-forward pure rice sake.
