Founded in 1869 near Lake Biwa, this tiny brewery (~1,000 liters/year) with Feminalise Gold and 3 consecutive National prizes achieves extraordinary daiginjo refinement with Suzuka mountain range water and GI Shiga-certified pure brewing.
