Polished to 70%, this josen-grade regular sake from Kawagoe's Hayakawa Shuzobu is brewed with Suzuka mountain spring water and reflects the brewery's emphasis on drawing out rice umami through strong koji and active yeast cultivation. The resulting sake carries rich amino acid character well-suited to warmed serving.
