The name Wakamizu translates as 'young water,' evoking the fresh spring water of the Bungo-Ono mountains that supports fermentation at this all-handmade brewery. This seasonal release demonstrates how the union of house-grown rice and pristine local water produces a junmai daiginjo of regional distinctiveness.
