Okuharima Miyanoi Yamahai Junmai uses natural spring water from the Miyanoi (宮ノ井) source and the traditional yamahai lactic acid method at Shimomura Shuzoten, surrounded by forest in Himeji's mountains, Hyogo. Founded in 1884 and practicing yamahai since 1994, this fully handcrafted brewery uses this specific water source name to highlight the terroir of its mountain brewing location.
