Hatsusakura Junmai is a pure rice sake from Hatsusakura Brewery in Katsuragi Town, Wakayama, made with Amano rice grown at 400 meters elevation in the mountains near Koyasan. Polished to 60% and brewed with well water from the Izumi-Katsuragi mountains, it offers pronounced acidity alongside a robust, food-friendly umami.
