Gekkanomai, meaning 'Dance Beneath the Moon,' is a junmai ginjo from Maizuru Shuzo in Akita Prefecture, a brewery that produces only pure-rice sake and matures each batch for several years before bottling. The ginjo grade polishing brings forward soft fruit and floral notes, while the house tradition of aging adds body and a quiet complexity not found in younger styles. It is a sake suited equally to reflective solo drinking and delicate Japanese cuisine.
