Tabito is the flagship junmaishu of Maizuru Shuzo in Yokote, Akita, a brewery dedicated exclusively to pure-rice sake. Brewed with rice cultivated under reduced-pesticide farming practices, it expresses a gentle, natural sweetness with well-integrated acidity and savory umami depth drawn from extended in-house aging of three to five years. Warm serving is recommended, as heat draws out the full roundness of the aged rice character.
