Description

A junmai daiginjo from Koizumishuzou in Chiba named Shikon ('purple and navy'), brewed with rice polished to at least 50% and no added distilled alcohol. The daiginjo process requires precise low-temperature fermentation to develop the delicate aromatics characteristic of the class. This bottling represents one of the brewery's premium expressions within the Tokaizakari brand family.
