Omachi rice polished to 50% from Hiroshima's Miyoshi region is brewed using the 'Iikaze' (good breeze) label's signature approach: cool, deliberate low-temperature fermentation drawing on Arida Shimizu spring water. After optimal cold-storage maturation, the sake develops the Omachi variety's characteristic full, enveloping umami with a gentle, refreshing finish. The label has won recognition at domestic and international competitions.
