Yamada Nishiki and the ultra-soft snowmelt water of the Oku-Daisen primeval beech forest in Tottori are the foundation of this daiginjo. The brewery was established in Meiji 10 (1877) in Kofu-cho and has maintained hand-crafted production for over 140 years.
