Bottled under the Azuminojusen sub-label, this junmai ginjo from Uehara Shuzo in Shiga is produced using the brewery's signature kioke tenbin wooden-vat pressing and house-cultivated wild yeast. The brewery's yamahai-centered philosophy delivers a rich, full character with natural depth.
