Fumotoi Junmai Ginjo Dewasansan Shiboritate is a seasonal fresh-press junmai ginjo from Fumotoi Shuzo using Dewa Sansan, a Yamagata-bred sake rice with delicate floral character. All production at this 1894-founded Sakata brewery employs the kimoto method, giving even the shiboritate a grounded, lactic depth.
