Bijincho Emi Daiginjo is the top expression in the Emi series at Nishimoto Shuzo in Tottori's Aoya district, a brewery founded in 1864 whose female toji Toyosawa Megumi became the first woman to win the Chugoku regional tasting competition in 2000. Daiginjo-grade polishing and the brewery's soft-water brewing environment underpin the refined profile.
