Bijincho Honjozo Karakuchi from Nishimoto Shuzo in Tottori uses Tottori's local Tamasakae rice polished to 60%, with brewer's alcohol addition producing a crisp, dry character and a clean, refreshing throat feel. The brewery was established in 1864 in Aoya-cho on the San'in coast.
