Du Yamada Nishiki poli à 40 % est vieilli à froid pendant trois ans avant d'être commercialisé en tant que daiginjo d'une brasserie de Fukui dans l'ancienne ville de poste d'Imajo. Une maturation prolongée à basse température arrondit le sake en une expression douce et subtilement sèche avec un parfum raffiné et une âpreté minimale.
