Le Ginjokoshu Genshu d'Asakan Shuzoten est un Ginjo vieilli et non dilué, conservé pour développer le caractère plus doux et plus riche d'un koshu tout en conservant toute la puissance de la fermentation sans dilution. Brassé à Miyagi, il illustre un style moins courant au sein de la tradition sake généralement fraîche et propre de Tohoku.
