Tamajiman Daiginjo d'Ishikawa Shuzo à Fussa, Tokyo, illustre l'engagement de la brasserie envers la production de sake premium en milieu urbain. Fondée en 1863 et située le long de la rivière Tama, Ishikawa Shuzo utilise les eaux souterraines douces et propres de la rivière pour brasser un sake aux arômes fruités délicats et au palais élégant et raffiné. Le grade daiginjo exige un riz poli à 50 % ou moins et une fermentation méticuleuse à basse température.
